    OMG, it’s here!!!! Since the Nintendo Switch was Launched in 2017 I’ve been eagerly anticipating the launch of this video game franchise staple. With the fifth generation of the game everyone is here! That means over 70 characters built into the game to choose from. I’m so pumped for this launch that I had to make something to celebrate. I’ve also wanted to try my hand at cake decorating. For this cake I decorated with fondant. It’s my second time working with it, and first on this scale. It didn’t come out perfect, but I learned a lot from it. As a tip, don’t roll it out too thin. Also, use a little powdered sugar to prevent it from sticking to the rolling surface. One problem I had was I laid it down too close to the middle. Unfortunately, there was no moving it afterwards. Still a great learning experience!

    This is classic peppermint bark. Smooth milk and white chocolate topped with candy cane pieces. But we added Oreo cookie pieces to bring it to the next level. With extra crunch and chocolaty goodness you can’t go wrong with these! Also a great alternative to the office cookie swap party!

    Happy National Apple Cider Day! Here at One More Bite we’ve been drinking cider since early September, so we thought we’d do something more fun with it. This recipe proves Apple and Pork are best friends. Not only is this seasonal dish delicious, it’s easy to put together for a weekday dinner or as part of a weekend meal. It also keeps great as leftovers.

    National Baklava Day

    Happy National Baklava Day! This dessert is a delicious mix of layered phyllo dough, nuts and honey. It’s common in many cultures throughout Western Europe and the Middle East along the Mediterranean. Each culture has their own version. Some use walnuts, while others use pistachios. Some will sweeten with only honey, while some use a simple syrup. Each variation is wonderful and simply scrumptious.

    One More Bite visited several places in Worcester, MA to find what we considered the best of the best in the city. We came to a strong conclusion. Lee’s Bakery, located at 98 Hamilton St. was our winner. Making Syrian and Lebanese food and pastries this bakery has a great variety of classic dishes. The food is made in-sight and it’s obvious it’s lovingly done. We only got baklava this time, but we’ll be back for more! Eric is looking for a spinach pie.

    Lee’s baklava is somewhat non-traditional, but clearly has it’s own history. The layers are wrapped around a walnut and honey mixture, rather than simply layered. This gave the pieces much more stability than other versions. The dough and nuts had an amazing texture. They were soft, yet just dense enough to give a substantial bite.

    Happy National Sundae Day!

    It’s National Ice-Cream Sundae Day!!! Not much can beat a really good ice-cream sundae! This is how we’re celebrating. We started with a bed of fudgey chocolate brownie, then 5 scoops of coffee ice-cream, caramel sauce and hot fudge, whipped cream, then some toasted pecans and rainbow sprinkles. Don’t forget the cherry on top!

    Then he got an idea. An awful idea. The Grinch got a wonderful, *awful* idea! – Dr. Seuss.

    We too had a wonderful “awful” idea here at One More Bite. For the movie premier of The Grinch we decided to make a “Grinch-shake!” This deviously delicious drink starts with vanilla ice-cream. Then we added some Peppermint Mocha Kahlua! To give the drink a signature Grinch color we added food coloring. Top this off with a mountain of whipped cream and some yummy candy decorations. Take the kids or yourself to the movies, then unwind with this decadent drink.

    How to Be a Good Host

    ‘Tis the season for lots of parties! Whether it’s with friends, family, or co-workers there’s a lot to celebrate in the coming weeks. Here are some tips if you find yourself hosting any parties this holiday season.

    Communicate

    Make sure you’re clear on the Who, What, When, Where, Why and How! No one likes ambiguity when it comes to a party, unless it’s a surprise party and they’re the guest of honor. Make sure your guests know who is invited. Is it just them, or can they bring a plus one? What are they coming for, and do they have to bring anything? When should they arrive? Better yet, when should they leave? Setting an end-time is a great way to wind down activities and make sure no one overstays their welcome. Where is the party and are there any special instructions on getting there? For everything you tell your guests give them the why and how. Leaving out details can lead to confusion.

    Stick to the Plan

    Once a plan is solidified, stick to it! If you have to change details of the party do it as early as possible and communicate it thoroughly. I would recommend reaching out to each guest to ensure they know of the change. Keep in mind, if you invite someone to an event they’ve now scheduled their time around you. A last minute change or cancellation can throw a wrench in your guests’ day. Be respectful of their time.

    Plan Accordingly

    If the party starts at 6:00PM, don’t head to the grocery store to pick up food/drinks at 5:00PM. Plan ahead and make sure your venue is clean and ready well before the start time. All food and drinks should be planned out as well. There should always be something available. If you’re having a larger meal, some light snacks are good. If not, continuous food is a good idea. Don’t put everything out at once. Make sure it comes in waves so it’s always fresh. Also, know how long it takes to prep and cook a dish. If you’re guests are arriving at 6:00PM and expecting to eat around 7:00PM, you’re going to have a problem if you start cooking a turkey at 5:00PM.

    Consider Diets and Preferences

    All parties should have some form of refreshment. Always make sure your guests have water at a minimum! Any other drinks are your discretion. Did you invite someone with lactose intolerance or a vegan diet to the party? You better have more than just pizza to eat. Also, make sure you have enough cups, plates, bowls, cutlery and napkins as appropriate.

    Stay Engaged

    Make sure to greet your guests when they come and go. Also ensure everyone is having a good time. Don’t seclude yourself or only talk to a few people.

     

    There’s a lot more to consider when hosting a party, but I highlighted these because I’ve been to parties where the host made some of these offenses.  Can you think of anything else? Put it in the comments below!

  • Eric’s Apple Buckle/Crumble

    Eric’s Apple Buckle/Crumble

    This is one of my signature recipes. I bring it to every holiday party, and it goes quick every time!

    A delicious combination of apple and spices. The Rum (or Bourbon Whisky) adds depth, and the warm spices give it a signature holiday flavor. Cardamom is the secret ingredient here. It adds an extra light and floral flavor that a lot of people aren’t familiar with.

    While this dish is called a buckle/crumble, it’s really neither. It doesn’t have any eggs, so it’s not quite as cake-like as a buckle, but the crumb isn’t as loose as a crumble. The “crumble” or dough is more like a loose shortbread. It has a sandy texture and can be packed down tight on top of the apples. This seals the apples in and slowly incorporates moisture into the “dough” as it bakes.
