  • Champagne Poached Salmon

    Champagne Poached Salmon

Happy New Year’s Eve! It’s National Champagne Day! Instead of a simple mimosa recipe or toast, we wanted to do something fun and different. Today we made a champagne poached salmon. Eric isn’t a huge seafood, but he even enjoyed this dish.

For this recipe we used a Brute Blush Champagne, however any type will do. Micro Herbs/Greens come in all different varieties, but we chose one with Amaranth because of the deep purple color.

  • Gingerbread People Review

    Gingerbread People Review

    Zoe’s Take:

    7/10

I like gingerbread a lot, and these were no different. The biggest problem is that the recipe called for a cake mix that basically doesn’t exist, volume wise, which made the dough very wet. I remedied this by adding more flour. Another problem was because of the cake mix, the gingerbread expanded way more than if I had made the dough from scratch. The gingerbread was very good though, and very moist and chewy, exactly what I was looking for. I decorated each gingerbread person very simply, but they could very well be complex and done with royal icing. Definitely good, but definitely some issues.

    Eric’s Take

    8/10

I enjoyed making this recipe. The shortcut for this cookie was a spice cake mix. Again, the recipe called for a size that didn’t exist anymore. I also added a tad extra flour and this helped a lot. This was my first time making gingerbread and I had fun doing it. I also decorated very simply. This recipe lost one point for the texture as it was chewy and less traditional. I also dropped it a point for taste. I didn’t overly love the flavor. It was a bit bland and needed some more sweetness. Overall I enjoyed the process and cookies. I gave these cookies away as gifts, and they received very good reviews.

  • Peppermint Hot Chocolate

    Peppermint Hot Chocolate

When I was young, we used to visit our family friends in Concord, Massachusetts. It would snow and be freezing and Patricia would take out the snowman mugs and the container of chocolate powder and tiny marshmallows, and make us delicious hot chocolate.

I can also flash back to the many ski trips I had out west. The kids would be in ski school while the adults combed the mountain. On our many breaks out of the cold, there was always hot chocolate. I can just smell it by recalling the memory. But that hot chocolate is made from powder. This hot chocolate, it isn’t.

Smooth dark chocolate, whole milk and maybe a touch of cream… maybe some non-traditional spices? Topped with whipped cream and candy cane crumble? Perfect for freezing cold night.

  • National Baklava Day

    National Baklava Day

Happy National Baklava Day! This dessert is a delicious mix of layered phyllo dough, nuts and honey. It’s common in many cultures throughout Western Europe and the Middle East along the Mediterranean. Each culture has their own version. Some use walnuts, while others use pistachios. Some will sweeten with only honey, while some use a simple syrup. Each variation is wonderful and simply scrumptious.

One More Bite visited several places in Worcester, MA to find what we considered the best of the best in the city. We came to a strong conclusion. Lee’s Bakery, located at 98 Hamilton St. was our winner. Making Syrian and Lebanese food and pastries this bakery has a great variety of classic dishes. The food is made in-sight and it’s obvious it’s lovingly done. We only got baklava this time, but we’ll be back for more! Eric is looking for a spinach pie.

Lee’s baklava is somewhat non-traditional, but clearly has it’s own history. The layers are wrapped around a walnut and honey mixture, rather than simply layered. This gave the pieces much more stability than other versions. The dough and nuts had an amazing texture. They were soft, yet just dense enough to give a substantial bite.

  • Giant Reese’s Cup Cake

    Giant Reese’s Cup Cake

Chocolate and Peanut Butter. Amazing. Delicious. Perfect. This classic combination has stood the test of time and is immortalized in the Reese’s Peanut Butter Cup. But sometimes, I just want to eat cake… but also Reese’s peanut butter cups. So I made a cake. It’s not like this hasn’t been done before, because it definitely has. But this one is mine, and I’m obsessed with the flavor, texture and deliciousness of it all.

(but it’s super annoying to make)

I shouldn’t be saying that about my own recipe, but I won’t lie to you, it’s annoying. Since there is no actual baking involved, there is instead a lot of refrigerator time. Every time you do a layer, the cake sits in the fridge for 30 minutes before you can do the next one. That’s the worst part about this cake. But if you have 2 free hours and feel like tackling it, then I would recommend it, because it’s like a whole lot of peanut butter cups that you can eat like a cake.

So come have some cake that’s more like candy as we are only TWO days away from Halloween!

  • Happy National Chocolate Milk Day!

    Happy National Chocolate Milk Day!

Today is September 27th. It’s National Chocolate Milk Day!

Why is this important? Let me tell you…

I love chocolate milk. In elementary school I drank it 3 times a day, and that continued, although not at that frequency still today. For me, it’s pretty perfect the way it is. But with anything in the culinary world, something can always be made better. The chocolate milk I drink now is different than the one that I drank as a child.

That milk was always skim, with Hershey’s chocolate syrup. These days, I either use 1% or 2% milk and I use Hershey’s dark chocolate syrup now, as it’s way more my aesthetic than the regular chocolate syrup. Plus, it’s not nearly as sweet. But still, this is pretty basic as far as chocolate milk goes. So let me give you some new ideas.

For your basis yet still slightly jazzed up, take my basic morning chocolate milk.

    Zoe’s Morning Chocolate Milk

    Yield: 1 Serving

    -1 cup 2% Milk

-1 TBSP Hershey’s Dark Chocolate Syrup

Pour milk into your cup of choice, add syrup, and stir with a spoon. ENJOY.

    *Recipe pictured is doubled

For your normal chocolate milk lover, this would probably be enough. It’s interesting enough and just slightly different from the chocolate milk you’d get at any restaurant or elementary school to make most people say, “Oh that’s good!” But let’s go bigger. Go big or go home, right?

In recent years, the idea of mixing salt and chocolate took off. Every chocolate came in milk, dark, white and salted. So let’s make Salted Chocolate Milk. If it works with a chocolate bar, a cupcake and a brownie, why not with chocolate milk? If I’m being honest with myself, and I always am, just adding some salt is not enough for me. So I’m going to amp that idea up a little more. What if… I took the idea of salted chocolate and added in two more elements? As a chef, I always enjoy adding a little extra to something in order to make it that much more complex.

So today I made Salted Caramel Dark Chocolate Pretzel Milk.

I’ve never made this before mind you, so this was an experiment!

Salted Caramel Dark Chocolate Pretzel Milk

    Yield: 1 serving

-Caramel Sauce (Garnish, use on the inside of the glass)

-2 TBSP Hershey’s Dark Chocolate Syrup

    -1 Cup Milk

    -1 TSP Brown Sugar

    -1/2 TSP Sea Salt

    -Salted Pretzels (Garnish, as needed)

    -Whipped Cream (Garnish if desired)

Mix chocolate syrup into the milk. Add the brown sugar and continue stirring until dissolved. Add in the sea salt and stir a few times until fully combined. Top with caramel sauce (just a single swirl is fine) and garnish with a pretzel rod or whatever shaped pretzel you prefer.

    *The recipe pictured is doubled

Oh! If the idea of drinking chocolate milk (and having all that sugar) scares you, consider this. Chocolate milk functions extremely well as a post-workout or post lifting drink. While you can go out and buy premade drink mixes filled with electrolytes. Chocolate milk contains healthy fats, a variety of enzymes and naturally occurring electrolytes, which can speed your recovery and make you feel better after a workout. Now, I always drink chocolate milk after a workout, but that’s mostly because I just like it, and I wouldn’t recommend the more… unique chocolate milk recipe I am including in this article.

My final note about chocolate milk is if you’re over 21, and you want to make your chocolate milk more adult, add some Bailey’s Irish Cream, Amaretto or RumChata to your wonderful chocolate drink. Personally, it’s not my thing, I like the purity of a simple chocolate milk, but seriously, feel free, I’m sure it’s delicious. Some other additions to chocolate milk that you might want to try are:

    -Cinnamon

    -Cayenne Pepper

    -Chile Peppers

    -Coconut Cream

    -Vanilla or Almond Extract

    -Nutella

    -Star Anise

And if you do make our Salted Caramel Dark Chocolate Pretzel Milk, please, take a picture and show us! We’d love to see it!
