  • Caramel Corn with Pistachios, Peanuts and Coconut

Caramel Corn with Pistachios, Peanuts and Coconut

Want to know a secret? I’ve never really enjoyed caramel corn. My grandmother used to buy those massive tubs that were divided into three sections, one with regular popcorn, one with caramel corn, and I don’t remember the last one. I was never interested in the sweet popcorn, only the salty stuff.

But that has never meant that I don’t enjoy actually making caramel corn. This one is particularly good because it combines the sweetness of caramel with the saltiness of peanuts and pistachios and the mild sweetness of coconut. Basically, it’s the perfect sweet and salty snack.

  • Aquaman Trident Cookies

    Aquaman Trident Cookies

So normally, this would be a trident. The original blonde animated Aquaman carried a golden trident (unless you’re referring to the Trident of Neptune, yes I am a nerd). But I like Jason Momoa a lot, and I love his silver trident, except… IT’S NOT A TRIDENT. Technically its a pentadent but we’re gonna call it a trident for the simplicity of it.

So I made cookies… and by cookies I mean one big ass chocolate chip cookie that I molded into a trident shape the best I could, baked it and then frosted it with icing. I really hope that Jason Momoa would approve of this cookie, as it was made in his honor since he may as well be the coolest Aquaman I’ve ever seen.

  • Mexican Hot Chocolate Cupcakes with Tequila Buttercream

Mexican Hot Chocolate Cupcakes with Tequila Buttercream

I have been asked for this recipe multiple times since I created it. Earlier this year, I competed in an online recipe competition in which I had to use the chocolate brand Callebaut to make a recipe for a specific category. I competed in 4 different categories in the competition and in two of those categories I made it to the final round. These cupcakes were one of the two that made it.

I enjoyed making these cupcakes immensely, and even more so, enjoyed eating them. These cupcakes are not very sweet, and have a little kick of spicy in the cake itself. The buttercream on the other hand, is sweet and very alcoholic. The tequila is not cooked out, so all of the taste and all of the alcohol is still present.

I love love love these cupcakes, and I definitely want to see them if you make them! Please tag @withzoeanderic and @chefzoe on Instagram, post the picture on our Facebook page, or post in the comments on this post!

  • Holiday Shopping Tips!

    Holiday Shopping Tips!

Unless you’re like me and start shopping for holiday gifts right after Halloween, this is a good time to start! You have a LOT of options. From the mall, to flea markets and holiday markets to the vast internet, every present you could ever want is out there.

While I can’t speak for all of you, I love to shop online. I have a knack for finding deals and coupons, and employ a variety of plug-ins on Google Chrome to find even more deals! I even use the app Paribus to get money back on Amazon purchases.

    https://www.joinhoney.com/ Get Honey Here

While these are all well and good, that doesn’t tell you where to go. Obviously, the favorite site is Amazon. If you don’t regularly buy Amazon Prime, here’s a little tip for you. You can get a month of free prime as a trial every year. I save mine for December so I can get all my purchases with free shipping. Would you like another Amazon tip? Order early in the month. Like, right now. The post office receives well over 5 million packages every year for delivery. Since Amazon has a contract with USPS, don’t over-burden your local post office at the end of the month by ordering everything last minute. Your postal carrier will definitely thank you for it.

If you’re into unique items that you probably can’t find on Amazon, check out Etsy. Etsy is a maker’s site, and you can find all sorts of handmade, unique and one of a kind items there. I also know that supporting artists is incredibly important (I used to sell on Etsy). The prices range from low to extremely expensive. It’s definitely possible to find something for every price range and every person on Etsy.

My secret favorite website is the last one I’ll tell you about. If you haven’t before, check out Wish. Most of what you can buy from Wish seems to be overstock. You can find incredible items for very little more, or free and all you pay is $2-4 in shipping. I buy a lot of my items off of Wish, but there is one big issue. Shipping isn’t really tracked, and it’s not very fast. So if you’re going to order off of Wish, do it NOW. I ordered all my Wish items at the beginning of November.

I pride myself on being a fantastic gift giver. I’m a big fan of useful gifts, as in, gifts you can actively use or need. If you need any help with your gift choices, send us a message on here, or on any of our social media sites. We’ll find you an idea and a deal.

  • Challah French Toast, Apricot Bacon Jam and Bourbon Creme Anglais

Challah French Toast, Apricot Bacon Jam and Bourbon Creme Anglais

French toast is a fantastic classic breakfast. While we’re big fans of classic greatness here, I’m a bigger fan of making classic things better!

I just want to point out a couple of things about this amazing dish. You don’t have to make the challah yourself. I did, but that’s because I am an overachiever. The bacon jam isn’t necessary if you’re a vegetarian or keeping kosher, but if neither of those apply to you, bacon jam it up! You can also skip the bourbon in the creme anglais if that’s not your cup of tea, but the extra boozy kick really help, in my opinion.

This was really good french toast. And I definitely think you should make it. So here’s the recipe.

  • National Parfait Day!

    National Parfait Day!

It’s National Parfait Day and we’re making a whole bunch of parfaits. Well, by a whole bunch, I mean two. Parfaits can come in a variety of different flavors and styles.

In my house, yogurt is a staple. We eat Greek yogurt most often, and generally with fruit mix-ins (although I really like the candy mix-ins, or pretzels). And while the yogurt we eat is generally for breakfast, I decided to make one for breakfast and one for dessert. Instead of giving you long recipes, I’ll just explain them to you.

The first parfait I made was my Pomegranate Breakfast Parfait.

This parfait is more towards what people imagine to be “classic”. Cinnamon spiced greek yogurt functions as the base, with pomegranate seeds and pistachio seeds as the other layers. For some extra sweetness, add a drizzle of honey over every yogurt layer. Top with berries and enjoy!

The second parfait I made was a dessert parfait. I have this thing for s’mores. I really really really like s’mores. So I made it into a parfait.

So here is my S’mores Dessert Parfait.

For the base and top layer, crush a few graham crackers. I use the classic honey flavored ones. In a double boiler, melt some dark chocolate. Once fully melted, I mixed it into some plain greek yogurt, thus making a really rich (very tasty) dark chocolate greek yogurt. I recommend using marshmallow fluff for the marshmallow layer. If you have a butane torch, gently caramelize the top layer of marshmallow and then top with a graham cracker and chocolate square.

    Delicious. Try these out.

  • #3: New Brunswick Slider

    #3: New Brunswick Slider

    Zoe’s Take:

    9.5/10

This was a really good slider that I was not actually expecting. The idea of using a ‘pot roast’ as slider meat seemed a little off to me at first. I’m so happy that I was wrong. Everything about these sliders was just SO GOOD. So why didn’t I give it a 10/10? Two reasons. The first reason is that it takes at least 5 hours to make between slow cooking the roast and making the sauce. The second reason is that I felt it needed something. Since I’m really into spicy and hot, I decided to switch out the pickled vegetables on top for my homemade candied jalapeno peppers. For me, that REALLY helped step the slider up to perfection. I definitely recommend you make this slider ASAP.

    Eric’s Take:

    9.5/10

This is my favorite recipe out of the cookbook so far! I’m kicking myself for not trying this at Epcot. The recipe for the pot roast is relatively basic. I decided to use my crockpot instead of a dutch oven. The sauce was really good too, I love Chinese mustard….which is basically Dijon mustard and horseradish. The lightly pickled vegetables added a great crunch to the sandwich. This recipe lost points on complexity. Similar to Zoe I felt it was a bit long to make the pot roast. Especially when considering the final product. For example, some roast beef would have been just as good and taken far less time. Overall great recipe!
