    Chocolate Frogs… and Other Fantastic Beasts!

    I’ve been obsessed with Harry Potter since the books first started coming out. I always got the books as soon as possible, and then enjoyed the movies as they came out in later years. When the series ended and Fantastic Beasts and Where to Find Them premiered, it was the start of a whole new fantasy. Same world, different characters, story and setting.

    Suffice it to say, I’m obsessed. Since today is the premier of the SECOND Fantastic Beasts movie, I made chocolate frogs to celebrate. Unfortunately for me, I am not talented enough to create some of the more creative creatures J.K. Rowling put to paper. So these chocolate frogs were good!

    Dark chocolate candies filled with chocolate peanut butter mousse? I think yes. We’re sneaking these in to see the movie (shhhh, don’t tell).

    Pro and Cons of a Destination Wedding

    So you’ve decided to get married! Unless you’re planning a little backyard affair with only close family and friends, it’s time to start planning! But wait. You’ve seen all these amazing pictures on Instagram of celebrities getting married on tropical islands and you’re thinking that’s what you want to do!

    Obviously, you probably don’t own your own island (we can’t all be Johnny Depp). So your option is a destination wedding.

    Now there are so many options. You can go to Europe, the Caribbean, Mexico, Bermuda… the options are endless. There are even websites devoted to finding you the perfect destination, resort, wedding planner and package for your perfect wedding. While that’s all well and good, is a destination wedding even right for you?

    We’ve compiled a list of pros and cons that you can use to see if jetting off to a foreign country is right for you.

    ~Pros~

    • You can have a smaller wedding and a good reason to go with it.
      Are you looking to have a smaller wedding but don’t know how to tell all your friends and extended family that
      they’re not invited? This is a helpful way to only have the few people you want at your wedding without making
      a million excuses.
    • Most destination wedding venues have seasoned wedding planners  to plan your whole affair.
      This takes away from the stress of having to find a planner all by yourself, and paying out thousands of dollars
      for someone who may not have any destination wedding experience.
    • You don’t have to lift a finger to plan the wedding.
      If you’re a control freak, this may be the opposite of what you want. But since many destination wedding venues are full service, all you have to worry about is getting there, and getting your wedding clothes and rings. Cake, flowers, set-up, food… they’re all taken care of (depending on your package).
    • Your budget doesn’t really matter.
      Unless you’re having over 30 people at your destination wedding, it is highly likely that you will only be paying a fraction of the cost you would be paying to have a wedding in your hometown. Since everything is through the venue, you’re not paying multiple vendors for every little detail. And there are packages in every price range.
    • There are more than just a few options.
      When you choose a destination wedding, you’re choosing to have all the options. There are so many different countries to choose from, and within each country, tons of different resorts and venues to decide between. You’ll have your choice of what sort of weather your’re looking for, as well as what kind of aesthetic and view.
    • There will probably be less family drama.
      Worried about planning a wedding that is full of family drama? Well, this may be the type of wedding you should have. Not only do they not have a say in what you choose, they won’t have access to your wedding planner in a different country. And, if the drama is simply that bad, you don’t have to invite the drama queens.
    • It can be both your wedding and honeymoon.
      You’re already there, all you have to do is stay for an extra week… or three after your guests have all gone. Some resorts out there will actually include honeymoon time into their packages so that you can stay and celebrate your new relationship status without having to pack up and go somewhere else.

    ~Cons~

    • RSVPs become very important.
      You’re about to fly to another country. You need to know ASAP who is coming and who is not. This is not just about food or seating. It’s about hotel rooms. Don’t allow people to wait until the last minute.
    • You should be prepared for everyone you invited to accept the invitation.
      Don’t invite people on the off chance that they will decline. On a similar note, don’t send invites to people you don’t want there. People like destination weddings, it’s a chance for a mini vacation. It is entirely possible that everyone you invite will be there. So use your invites sparingly.
    • You will have little to no control.
      While this is a pro for a fair amount of people, it can also be a huge con. If you have this perfect vision in mind and nothing else will do, a destination wedding is probably not for you. The venue’s planner will have control over everything and there won’t be enough time once you get there to change everything.
    • If you somehow end up with a bad wedding planner, your whole wedding could be ruined.
      You’re probably not going to meet the wedding planner until the day of or day before. You don’t know their reputation or the weddings they’ve planned before yours. If you’re not so willing to trust a wedding planner you’ve never met, this could end up being a huge issue for you.
    • It could be prohibitively more expensive.
      If you’re looking to fly all 100 of your closest family and friends out to a resort, you may end up spending way more than you’ve bargained for. Unless you have a massive budget, destination weddings are best kept to small size… especially if you’re paying for everything.
    • Issues may arise with health and lack of passports.
      Not everyone has a passport and not everyone is well enough to fly. This could cause a rift between family members or friends, not because they weren’t invited, but simply because they can’t come due to special issues. If you give them enough time, they may be able to get a passport, but those who can’t fly because of health related issues? Well, they’ll just have to stay home.
    • Documentation and legal measures must be explored.
      There’s always paperwork involved. Even when you get married in your home country, there’s still a marriage license to apply for. However, getting married in a different country does require some extra paperwork. We won’t get into it here because each country is a little different, but expect to be doing some research on how to make sure your marriage is legal.


    So is a destination wedding right for you? Maybe. What kind of wedding you want, the number of people you want to invite, and your family situation could all be factors in whether jetting off to another country for your wedding fun is right for you.     Butternut Squash “Confit” with Wild Mushrooms and Winter Greens

    In case you didn’t already know, the term confit is usually applied to meat, especially to duck. It means that the item being cooked is being cooked in its own fat. The meat is cooked very slowly, and is seasoned while it cooks. The meat is then preserved by letting it cool down and stored in its own fat.

    You may be thinking, “How can I make a confit from butternut squash? It doesn’t have its own fat!” Well, if you’re a really traditional chef, you can’t. But if you know me, you already know that I am not in any way a traditional chef. In recent years, the term “confit” has been used as both descriptive of the food and an action.

    To be frank, to confit is to Cook a food in fat until it is incredibly tender and delicious.

    So that’s what we did here. But combining a long used technique with a new definition, we’ve created a crazy tender, highly flavored butternut squash topping that you can use for whatever suits your needs. Just make it. It’s worth it. Trust me.

    On this wonderful Saturday, we at One More Bite are celebrating National Sandwich Day. There are so many different kinds of sandwiches to choose from. So, I had such a hard time choosing what specific genre of sandwich to make for you guys.

    Dear readers, I made you grilled cheese. A really really good grilled cheese at that. Nothing beats bread, butter and melty cheese, except for maybe this.

    Roasted Pear, Fontina and Roast Beef Grilled Cheese on Apple Cinnamon Bread

    In order to make everyone happy, we made two different versions of the same sandwich. The version above requires bosc pears and apple cinnamon bread. I’ve always found bosc pears to be less sweet and a little more crunchy, and contrasted with the (very) sweet apple cinnamon bread, the flavors ended up balancing out. While this grilled cheese is still a little bit too sweet for me, if you love apples and cinnamon, this grilled cheese is definitely for you.

    Now, I also did a more savory version of this grilled cheese. I used onion ciabatta bread and instead of bosc pears, I used red anjou pears, which are soft, sweet and very juicy. In the case of this grilled cheese, the sweetness of the pears served to accentuate the mild and creamy flavor of the fontina cheese. This is a great sandwich for someone who wants grilled cheese, but also something extra.

    I am mildly obsessed this sandwich.

    What We’re All About!

    Here at One More Bite, we’re REALLY into food. Like, more than just a passing interest. Zoe has dedicated herself to it, and Eric is so interested, he made a food blog! But when we created this website, the goal was not just to bring food to the masses. It was to bring everything the world of hospitality and the world of food has to offer.

    So far on One More Bite, you’ve probably seen recipes ( a lot of them ), articles giving tips and tricks on managing party stress, and us taking trips to relevant places for the season. What we haven’t shown you yet is videos (Coming soon in 2019!), interviews with people in the industries we cover, and more.

    In 2019, we will begin talking about physical and mental health as relating to food, post a significant number of videos including but not limited to: tutorials, recipes in progress, and round table discussions. It is very important to us to bring you diverse and different content, and we hope that you’ll stick with us on this fascinating journey.

    Eric’s Orlando Trip

    As i’ve mentioned on the blog before, fall is my favorite season. One of the highlights is definitely the annual trip to Orlando that my friends and I go on. We’ll hit our favorite spots: Disney’s Magic and Animal Kingdoms, Universal Studios (mostly for Harry Potter World), and of course Epcot for the International Food and Wine Festival! Here’s a brief overview of the trip! Check out the gallery for some highlights of the eats!

    Disney’s Magic Kingdom

    Magic Kingdom is quintessential Disney. My favorite thing to do is head straight to Space Mountain. It’s one of my favorite rides in the part. The Seven Dwarfs Mine Train is also a favorite. There’s so much to do in Magic Kingdom. One must do is to have lunch or dinner at the Be Our Guest Restaurant (Beast’s Castle). You’ll need to plan ahead for this and make a reservation well in advance. You can even dine in the West Wing and there is Grey Stuff….and it is delicious. Another must-do is grab a Dole-Whip…which is pineapple soft serve and it’s amazing.

    Disney’s Animal Kingdom

    We always go back to the Animal Kingdom for three reasons. Each of which make this park worth the price of admission: The Yak & Yeti Restaurant, Avatar Flight of Passage, and Expedition Everest! Yak & Yeti is a great place to eat and features some unique pan-Asian fare. The last two are some of the best rides at Disney.

    Epcot

    Epcot is Epcot…and one of my favorite places on earth…especially for International Food and Wine Festival. The festival features great regional recipes from around the world. I haven’t had a bad bite there…and I’ve had A LOT of bites. The rides at Epcot are a lot of fun too; Test Track, Soarin’, and Mission: SPACE are a few favorites. Spaceship Earth (the ball) is also a classic with a time traveling ride narrated by Dame Judi Dench. The Land is also a great experience which brings you on a journey of agricultural history and includes a trip through the greenhouses and labs. Group tours are also offered of the greenhouses. I haven’t done the tour yet, but it’s on my to-do list!

    Universal Studios/Islands of Adventure

    Harry Potter!!!! I love Universal Studios…but since they put in The Wizarding World of Harry Potter that’s all I’ve cared about to be honest. You can pick your wand at Ollivander’s and buy sweets at Honeydukes, not to mention ride the Hogwart’s Express (with park-to-park ticket). The other reason we love Universal Studios this time of year is Halloween Horror Nights! This is an after hours event were you can walk through various scare zones, go on rides, and of course get spooked at the houses. If you’ve ever been to a haunted house you know there are jump scares and creepy decorations. This is so much more! With some houses bringing you directly into the worlds of shows and movies like Stranger Things, Halloween 4 and Poltergeist…it’s absolutely terrifying. Not to mention a lot of fun!

    Universal is also home to Toothsome Chocolate Emporium & Savory Feast Kitchen, which is one of the best places on the planet! They have great food and drinks, a fun atmosphere, and plenty of chocolate!

    Texas Chainsaw Massa-curd Burger

    A habanero stuffed patty slathered in melty cheese curds and homemade ginger-ketchup.

    Be careful! This burger is hot!

    Zoe’s Take:

    9/10

    I really liked this burger, but I also really like hot peppers. If you don’t love hotness, you probably won’t love this one as much as I did. There are 4 (yes you read that right) habaneros peppers diced up in the patty. Paired with the melty cheese curds, and the sweetness of the homemade ketchup, I think it was a pretty perfect burger. I give it a 9 because I think it’s probably too hot for a lot of people.

    Eric’s Take:

    9/10

    This burger was fantastic. Habaneros are my favorite pepper by far. Once you get past the heat they have a great and unique flavor. I was cautious about the amount of heat I was adding, and the habaneros I had were pretty big so I only used two. I also grilled burgers. This may have caused the oils from the peppers to leak out of the burger. I say this because I didn’t feel it was spicy at all, but all the flavor of the habaneros was there. The cheese curds also added a great flavor and texture, which was great. The home made ginger-ketchup was really good too. However, I halved the amount of recommended ginger and it was still a lot. I gave this burger a 9 because it was a great burger and was easy enough to make, however, the proportions of ingredients seemed to be a little off.

     

    Zoe’s Take on the Cookbook as a Whole:

    10/10

    This is one of the coolest cookbooks I’ve ever used. I love burgers so much, and this book is ONLY burgers. So if you’re like me and enjoy burgers, and interesting ones at that, I definitely recommend buying this book. I can’t promise you that all of recipes are going to be 10/10, but that’s just my opinion. For you, it could be all 10/10.

    Eric’s Take on the Cookbook as a Whole:

    9/10

    This was a super fun cookbook. Great layout, fun recipes and easy instructions. The proportions for ingredients were a little off sometimes and some ingredients were very hard to find. If you love burgers this is a MUST have. I look forward to using this book for a long time coming.

    Zoe & Eric Carve Pumpkins

    It’s 5 days until Halloween, and it’s about time to start carving pumpkins. Since Eric and I already went pumpkin picking, we decided to carve them as well.

    I’ve never actually carved a pumpkin myself, since I almost sliced my hand off last time I tried doing it. But using a pattern (for me) was very helpful. I chose something more traditional, but also close to my heart, a cat. In case you didn’t already know, I have 4 of them.

    Eric however, didn’t use a pattern, he drew his own, going for a more nerdy feel with the Deathly Hallows, which I wholeheartedly support. He also borrowed his friend Dustin (see the end of the post for his details), to help out with the process.

    Carving pumpkins can be hard work. First you cut off the top, or the bottom, and scoop out all the seeds. Then you scrape down the side that you are carving. Once that is done, you either draw the pattern on, or use a pre-made pattern. I used the little plastic knives that came with the pumpkin pattern, but any serrated knife will do really.

    You should start with the smallest most delicate pieces. Wait until the end to pop out the cut pieces as well. Oh, and pop them out from the inside! But most of all, you should have fun when you carve your pumpkin! Even if you’re not planning on keeping the pumpkin, you should have SO much fun with it.

    Don’t forget to get all the pumpkin goop off the seeds, wash them, and then season with a drizzle of oil and sea salt, and then roast for 15-20 minutes at 300F.

    As Halloween approaches, pumpkins begin popping up on everyone’s front porches. While some people like the itty bitty tiny ones, some have giant beautifully carved ones. In order to get into the Halloween spirit and have some fun, Eric and I went pumpkin picking!

    We decided on a farm that is close by to where I live, 4 Town Farm in Seekonk, MA. They have a really cute setup for picking your own pumpkins. A tractor takes you on a short ride through some fields, before dropping you off at the entrance to a small corn maze. After hitting a few dead ends, we emerged from the maze, to gaze upon the pumpkin field.

    4 Town Farm

    We had a huge selection of pumpkins to pick from; big, small, round, long, green, white and yellow. Basically, a pumpkin for everyone. A fair amount of time was spent choosing a pumpkin. For carving, the shape of the pumpkin is important to consider, as well as the color. Eric was specifically interested in a longer pumpkin with a nice stem and that perfect orange you just associate with pumpkins. I prefer the smaller sugar pumpkins, which is directly related to the fact that they can also be cooked and have a higher sugar content.

    If you’re in the MA or RI area, I definitely recommend the 4 Town Farm, it’s super cute and has a lot of fresh produce and products!

    **If you have jack-o-lanterns, consider composting them when they’ve started to rot, tossing them in your garden to become fertilizer, or bring them to the dump (as many have a compost section).

    We’re talking about Over-the-Top the movie–this Hamburger tastes like arm wrestling.

    Zoe’s Take

    9/10

    I absolutely loved this burger. I didn’t think I would because I’m normally not the biggest fan of lentils. But I actually adored every bit of this burger. The lentil mixture was actually amazing. The added sweetness from the honey, plus the hotness of the serrano peppers ACTUALLY worked. I love most things that have goat cheese on them, and this was no exception. The baby spinach provided a nice crunch as well, which is definitely necessary for this burger. There is an earthiness to this burger that I didn’t expect to love, but I do. The reason why I didn’t give this a 10, is because it’s also a very messy burger, because the lentils fall off when you tilt the burger, which is sad.

    Eric’s Take

    8.5/10

    This was my favorite burger yet. The creamy goat cheese and fresh spinach with the sweet and spicy lentil mixture had great texture and depth of flavor. The honey and the serrano pepper did a lot for the lentil mixture. It was certainly a messy burger, but the lentil mixture held up better than I thought it would. This burger lost a point for the complexity. For the average person the multiple steps of this burger may be daunting. Cooking lentils is no easy task if you’ve never done it before. I actually overcooked my first batch. The half a point was lost on difficulty of sourcing ingredients. The “Orange Lentils” were difficult to find. I finally managed to get Red Lentils, which are really the same thing.
