    Keto Avocado Brownies

    One of the biggest hallmarks of the Keto Diet is that sugar is a big no no. This means that most sweets and baked goods are off the table unless they’re specially made to be keto-friendly.

    These brownies are pretty tasty too, not nearly as sweet as regular brownies with the texture of fudge. The avocado makes the brownies very creamy, and if you’re not an avocado lover, then you’re in luck because you cannot even taste it in the brownies!

    I like using stevia for this recipe, but you can use any sweetener substitute you like! There are tons of sweetener conversion charts on the internet, so feel free to use those! Also, feel free to add whatever mix-ins make you happy, whether it be nuts, keto friendly chocolate chips, or sugar free frosting (we like cream cheese!).

    And just so you can make sure you’re not going over your net carbs for the day, these brownies have 2.8 net carbs per brownie!

    3 Day Croissants and Pain au Chocolat

    Since culinary school, and even more specifically, since my Intro to Bread Making class, I have wanted to be good at making croissants. However, since they are time consuming and fairly difficult to make, I never really made the attempt. At least, until now.

    I tackled the croissant this week, and I have to say that the results were very very good for a first attempt. For a good croissant or pain au chocolat, you need layers, lots of layers. The more layers the better in my opinion. They need to be buttery and flaky and have depth of flavor.

    You can quite literally see the layer and layer of flaky croissant in these pain au chocolat that I made. Despite the amount of butter, these were light, flaky and absolutely delicious.

    Zoe’s Chocolaty Bacon Eclairs

    Eclairs are an amazing dessert. When I was young I used cannoli and eclair interchangeably. Yes yes I know that’s basically sacrilege, but I’m really into desserts and I was too young to know the difference.

    But these are all eclair. I won’t be providing you with the recipe because I will be doing a whole segment on desserts later this year, so if you’re really into it, stay tuned for that.

    These eclairs are the perfect munchie. Rich chocolate mixes with espresso and a touch of chili pepper, a slightly crunchy pate au choux, and delicious bacon jam with caramelized onions. Sweet, savory and umani in all the best ways.

    (and they’re really easy to make into an edible… )

    It’s important to note that eclairs are incredibly time consuming to make if you’ve never made them before.

    BUT! If you’re not about making your own, you could always buy some and add your own bacon mixture to the top of it!

    Absolutely Deep Dark Chocolate Fudge Cookies: Cookbook Review

    8/10

    I love a good cookie. If it’s an all chocolate cookie, even better. So when we saw this recipe in The Great Chefs of America Cook Kosher, we had to try it. It’s a good cookie. It might even be a great cookie, but it’s not a 10/10, 5 star amazing cookie because it didn’t live up to the fudge bit. When a cookie describes itself as fudge, I expect melty chocolate chips and a richness. These cookies spread out quite a bit for me and were huge and got a little crunchy. Don’t get me wrong, I still like crunchy cookies, it was just not what I was expecting. Oh well.

    Eric’s Take:
    9/10

    These cookies are VERY good! Super chocolatey and decadent. I thought this recipe was relatively easy to follow. There were a lot of steps and they were blocked in large paragraphs. There were also a lot of timed steps with mixing. I really liked these cookies, but the lost point was with the directions. Because of the steps being a bit confusing it led to inconsistent results between Zoe and my cookies.

    So I love chocolate, and ganache and, well, bars. What I am not a huge fan of is peppermint. I think having the peppermint extract and the peppermint on the top of the bars is too much for one cookie. Plus, the candycanes on top were a little bit chewy after sitting on top of the white sugary layer all night. The crust is good, the chocolate ganache layer is good and the cream cheese layer is good but there’s way too much peppermint in this. I think that just the peppermint extract is enough. If you’re really into candy canes though…this dessert is definitely for you.

    Eric’s Take:

    9/10

    These were delicious. I love “oreo” crust and chocolate ganache. The top is similar to a cheesecake. I thought there was just enough peppermint in these bars. But I like a lot of peppermint flavor. The problem with these are they don’t keep well and they are a bit messy. That might be due to me not pressing the cookie layer down enough. The shortcuts here were using a cookie bottom and folding in cool whip into the cream cheese layer.

    When I was young, we used to visit our family friends in Concord, Massachusetts. It would snow and be freezing and Patricia would take out the snowman mugs and the container of chocolate powder and tiny marshmallows, and make us delicious hot chocolate.

    I can also flash back to the many ski trips I had out west. The kids would be in ski school while the adults combed the mountain. On our many breaks out of the cold, there was always hot chocolate. I can just smell it by recalling the memory. But that hot chocolate is made from powder. This hot chocolate, it isn’t.

    Smooth dark chocolate, whole milk and maybe a touch of cream… maybe some non-traditional spices? Topped with whipped cream and candy cane crumble? Perfect for freezing cold night.

    This is classic peppermint bark. Smooth milk and white chocolate topped with candy cane pieces. But we added Oreo cookie pieces to bring it to the next level. With extra crunch and chocolaty goodness you can’t go wrong with these! Also a great alternative to the office cookie swap party!

  • Gregg’s Death by Chocolate Cake!

    Gregg’s Death by Chocolate Cake!

    It’s National Cake Day, and instead of making you a cake, I decided to bring you a piece of one of my favorite types of cake. In Rhode Island, there is an establishment called Gregg’s. It’s been around since 1972. Gregg’s home style desserts and pastries are award winning and don’t just taste good, they also look good.

    While they have an extensive menu ranging from Apple Pie to Turtle Cheesecake, my ultimate favorite is their Death by Chocolate Cake. It’s an extreme version of a chocolate layer cake. Death by Chocolate Cake is 6 layers and covered with tiny chocolate chips. The frosting in between layers is thick and even, with chocolate roses on the top.

    This cake is so incredibly rich, that eating the full piece they serve you is very hard, even for me. 6 layers of cake is one thing, with the added 6 layers of frosting and chocolate morsels… forget about it. I was given an entire Death by Chocolate Cake for my birthday last year. It took about a month to eat the whole thing, and my kitchen smelled like chocolate and pastries for 6 months after that.

    I definitely recommend trying one of their cakes or pies if you’re going to be in Rhode Island at all. They’re easy to find, and the locations are everywhere. And if you happen to get some Death by Chocolate Cake and survive… let me know!

    Chocolate Bacon Panna Cotta and Peanut Butter Mousse

    Chocolate, Bacon and Peanut Butter…OH MY! If you’ve never had Panna Cotta, it’s a silky Italian dessert like a thick pudding. Top that with a creamy Mascarpone Peanut Butter mixture and you have pure heaven. This dessert will be an instant hit at any event!

    Chocolate Balsamic Lamb

    I just want to say, this chocolate balsamic sauce is amazing. It’s smooth, velvety and both sweet and tart, chocolate and balsamic are just such good friends when mixed together. If you’re not the biggest fan of dark chocolate, feel free to use milk chocolate, although the effect will not be the same. Also, I would definitely say no to using white chocolate.

    I use this sauce on everything, you don’t have to, but it has my seal of approval. I’ve made it for competitions, for interviews in kitchens and for catering events. It’s always been a hit. So now I’m giving it to you! Use as needed.
