This is our easy ricotta filling for various pasta dishes.
32 oz Ricotta Cheese
2 Eggs
½ cup Shredded Mozzarella Cheese
½ cup Shredded Parmesan Cheese
2 tbsp Fresh Basil, Finely Chopped
2 tbsp Fresh Parsley, Finely Chopped
1 tbsp Lemon Juice
1 pinch Salt
1 pinch Pepper
1
Combine all ingredients in a bowl and mix well. Refrigerate if not using immediately.
